Follow The Directions

01

Step

Heat olive oil in a Dutch oven over medium-high heat. Add bell peppers, onion, and garlic; cook and stir until tender, 5 to 7 minutes. Season with salt and black pepper.

02

Step

Stir in diced tomatoes, white wine, 1/4 cup parsley, dried basil, dried oregano, and red pepper flakes into the bell pepper mixture. Bring to a boil, then reduce heat to low, cover the Dutch oven, and simmer, stirring occasionally, until the tomatoes break down, approximately 2 hours.

03

Step

Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost fully cooked, about 10 minutes. Drain well.

04

Step

Stir the drained spaghetti and cooked shrimp into the tomato sauce. Cook until the spaghetti is tender yet firm to the bite, about 2 to 3 minutes. Serve immediately, garnished with the remaining 1/4 cup of fresh parsley and grated Pecorino-Romano cheese.

For a richer flavor, consider using fire-roasted diced tomatoes.
Adjust the amount of red pepper flakes to control the level of spice.
Fresh basil and oregano can be substituted for dried, using about 1 teaspoon of each.
If you don't have Pecorino-Romano, Parmesan cheese is a suitable alternative.
For a vegetarian option, omit the shrimp and add a can of drained cannellini beans to the sauce during the last 30 minutes of simmering.

This recipe is fantastic! The sauce is so flavorful, and the shrimp adds a nice touch of protein.

I found the sauce to be a little too spicy for my taste, so I reduced the amount of red pepper flakes next time.
