In a medium bowl, combine the thawed corn kernels and sliced green onion. (2 minutes)

In a small bowl, whisk together the white wine vinegar, olive oil, and fresh lemon juice until emulsified. (1 minute)

For an extra layer of flavor, try grilling the corn before cutting it off the cob. Allow the grilled corn to cool slightly before adding it to the salad.
Fresh tarragon can be substituted for dried. Use 1 tablespoon of chopped fresh tarragon in place of the dried leaves.
If you don't have white wine vinegar, apple cider vinegar or rice vinegar will work as a substitute.
Taste and adjust seasonings as needed before serving. A little extra lemon juice or a pinch of red pepper flakes can add a nice zing.
