For a smoky flavor, grill the corn instead of microwaving it. Simply grill the corn in the husks over medium heat, turning occasionally, until the kernels are tender and slightly charred. Add a squeeze of lime juice for extra zest and brightness. If you don't have fresh corn, canned or frozen corn can be substituted. Just be sure to drain canned corn well, and thaw frozen corn before using. Feel free to experiment with other vegetables! Diced avocado, bell peppers, or cucumbers would all be delicious additions.
