In a medium bowl, whisk together the eggs and vanilla extract until well combined. Set aside. (2 minutes)

In a saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, brandy, and salt until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture comes to a boil and thickens. Reduce heat to low. (6-8 minutes)

Temper the eggs by slowly pouring about half of the hot milk mixture into the bowl of beaten eggs, whisking constantly to prevent curdling. Then, pour the egg mixture back into the saucepan with the remaining milk mixture. (2 minutes)

Continue to cook over low heat, stirring constantly, until the custard thickens further, about 2 to 3 minutes more. Be careful not to let it boil. (3 minutes)

Remove the custard from the heat and let it cool to room temperature, which will take at least 10 minutes. Then, cover and refrigerate for at least 4 hours, or until fully set. (240 minutes)

For an extra layer of flavor, try adding a pinch of espresso powder along with the cocoa powder.
If you don't have brandy on hand, feel free to substitute with rum, coffee liqueur, or simply omit it for a non-alcoholic version.
To prevent a skin from forming while the custard cools, press a piece of plastic wrap directly onto the surface.
