Spread the rice evenly across the bottom of the prepared baking dish. Sprinkle 1 cup of the Cheddar cheese over the rice, then season generously with black pepper and salt. Arrange the chicken breasts evenly over the rice-cheese layer. (10 minutes)

Spoon rounded teaspoons of cream of chicken soup evenly over the chicken breasts. Gently pour the water over the chicken, taking care not to disturb the rice layer too much. Sprinkle the dry onion soup mix evenly over the entire dish. (5 minutes)

Bake in the preheated oven for 1 hour. Check the rice for doneness; if the water has been completely absorbed, add 1/2 cup more water to keep the mixture moist. Continue baking until the chicken is no longer pink in the center and the juices run clear when pierced with a fork, about 30 minutes more. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C). (90 minutes)

Remove from oven and sprinkle the remaining 1/2 cup Cheddar cheese evenly over the dish. Let rest for 5-10 minutes before serving to allow the cheese to melt and flavors to meld. (10 minutes)

For an extra layer of flavor, try browning the chicken breasts in a skillet before layering them in the baking dish.
Feel free to substitute other cheeses, such as Monterey Jack or Colby, for the Cheddar cheese.
Add some chopped vegetables, like broccoli or carrots, for a more complete meal.
To prevent the rice from becoming too dry, cover the baking dish with aluminum foil during the first 30 minutes of baking.
