For a cheesy variation, sprinkle 1/2 cup of shredded cheddar or Gruyere cheese over the frittata during the last 10 minutes of baking. Feel free to add other vegetables, such as chopped onions, bell peppers, or mushrooms, to the frittata. Sauté them before adding to the pan with the broccoli. If you don't have an oven-proof skillet, you can use a regular baking dish. Just be sure to grease it well to prevent sticking. Leftover frittata can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave.
