In a large, heavy-bottomed skillet, cook bacon over medium-high heat until crispy, about 8-10 minutes. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, reserving the rendered bacon fat in the skillet.

Add sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Remove sausage and set aside with the bacon, leaving approximately 1/4 cup of bacon fat in the skillet.

Reduce heat to medium and add diced onion and minced garlic to the skillet. Cook, stirring occasionally, until softened and translucent, about 6-8 minutes. Stir in one can of diced green chiles and cook for another minute.

In a large bowl, whisk together eggs, liquid smoke, hot pepper sauce, seasoned salt, white pepper, parsley, and basil until well combined.

Crumble the cooked bacon and sausage and add them to the egg mixture along with the remaining can of diced green chiles, thawed hash browns, and sautéed onion mixture. Season generously with salt and freshly ground black pepper to taste. Stir until all ingredients are evenly distributed.

Grease a 9x13-inch baking dish with cooking spray or butter. Pour the hash brown mixture into the prepared dish, spreading it evenly. Cover tightly with aluminum foil and refrigerate overnight (or for at least 2 hours).

Preheat oven to 400 degrees F (200 degrees C).

Bake the covered casserole in the preheated oven for 1 hour.

Remove the casserole from the oven, carefully remove the foil, and sprinkle evenly with pepper Jack and Monterey Jack cheeses. Arrange the Cheddar cheese in a cross shape in the center of the casserole, and outline the cross with sliced black olives.

Return the casserole to the oven and bake uncovered until the cheese is melted, bubbly, and lightly golden brown, about 20-30 minutes more. Let stand for 10 minutes before serving.

For a spicier kick, add a pinch of red pepper flakes to the egg mixture or use a spicier sausage.
Feel free to substitute other cheeses, such as Gruyere or Swiss, for a different flavor profile.
If you don't have time to refrigerate the casserole overnight, you can bake it immediately after assembly. However, refrigerating allows the flavors to meld together for a richer taste.
Garnish with fresh cilantro or chopped green onions before serving for a pop of color and freshness.
