While the couscous is soaking, prepare the dressing. In a large bowl, combine 0.5 cup of crumbled feta cheese, 1 finely chopped jalapeno pepper, 0.5 diced cucumber, 1 minced clove of garlic, 0.5 cup of chopped green onion, 3 tablespoons of chopped fresh mint, 3 tablespoons of chopped fresh basil, 3 tablespoons of chopped fresh cilantro, 1 tablespoon of chopped fresh parsley, 2 teaspoons of ground cumin, 2 teaspoons of cayenne pepper, and the juice of 1 lemon. Stir well to combine. (5 minutes)
