Gently stir in the evaporated milk, maple syrup, ground cinnamon, ground nutmeg, vanilla extract, and rum extract. (1 minute)

Continue to simmer over low heat, stirring occasionally, until the pudding has thickened to your desired consistency. (About 5 minutes).

Remove from heat, cover, and let stand for at least 10 minutes to allow the flavors to meld. Serve warm or chilled.

For a richer flavor, try using full-fat coconut milk instead of evaporated milk.
Feel free to add raisins, chopped nuts, or dried cranberries during the last 5 minutes of simmering for added texture and flavor.
Adjust the amount of cinnamon and nutmeg to suit your personal preference. A pinch of cardamom or ginger would also be delicious additions.
If you don't have rum extract, a splash of dark rum can be used instead. Alternatively, omit it for an alcohol-free version.
