For a richer flavor, try using bone-in, skin-on chicken thighs. Roast them until cooked through, then shred the meat and use the pan drippings in place of some of the chicken broth. Feel free to customize the vegetables based on your preference. Diced bell peppers or frozen peas would be great additions. If you don't have pimento peppers, a dash of smoked paprika will add a similar smoky-sweet flavor. The casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
