Line a 9x13-inch baking dish with waxed paper, ensuring the paper hangs over the edges. (5 minutes)

Combine dates and water in a food processor or blender. Process until a smooth paste forms, adding more water as needed to achieve the right consistency. (10 minutes)

In a large bowl, combine rolled oats, shredded coconut, chocolate chips, almonds, pumpkin seeds, sunflower seeds, and cinnamon. (5 minutes)

Add the date paste, almond butter, applesauce, and vanilla extract to the dry ingredients. Using your hands, mix until all ingredients are thoroughly incorporated and evenly coated. (10 minutes)

Press the mixture firmly into the prepared baking dish. Cover with another piece of waxed paper and use a can or rolling pin to press down evenly and compact the bars. (5 minutes)

For a fruitier variation, substitute dried cranberries, chopped apricots, or raisins for the chocolate chips.
If you prefer a smoother texture, pulse the oats and nuts in the food processor a few times before mixing with the other ingredients.
Store the granola bars in an airtight container in the refrigerator for up to a week, or in the freezer for longer storage.
