Follow The Directions

01

Step

Bring a large pot of lightly salted water to a rolling boil. Cook linguine according to package directions until al dente, approximately 9-11 minutes. During the last 2 minutes of cooking time, add frozen peas. Drain pasta and peas, reserving 1 cup of the starchy cooking liquid. (Total time: ~11 minutes)

02

Step

While the pasta is cooking, melt butter and olive oil in a large skillet over medium-high heat. Add sliced mushrooms and diced onion; cook until mushrooms are nicely browned and onions are translucent, about 5-7 minutes. (Total time: ~7 minutes)

03

Step

Season chicken cubes generously with kosher salt and freshly ground black pepper. Add chicken to the skillet with the mushrooms and onions. Cook over medium-high heat until browned on all sides and cooked through, approximately 7-10 minutes. Ensure the internal temperature reaches 165°F (74°C). Return the mushrooms and onions to the skillet. (Total time: ~10 minutes)

04

Step

Reduce heat to low. Add cream cheese, fresh lemon juice, and lemon zest to the skillet. Stir continuously until cream cheese is completely melted and a smooth, creamy sauce forms. Remove from heat.

05

Step

Gently fold in grated Parmesan cheese, grated Pecorino Romano cheese, and chopped fresh parsley. Toss the cooked pasta and peas with the sauce, adding reserved pasta cooking liquid as needed to achieve your desired sauce consistency. Serve immediately.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the skillet along with the mushrooms and onions.
Freshly grated Parmesan and Pecorino Romano cheeses are highly recommended for the best flavor and texture.
If the sauce becomes too thick, add more of the reserved pasta cooking liquid a tablespoon at a time until it reaches the desired consistency.
Garnish with additional fresh parsley and a lemon wedge for serving.

A little too lemony for my taste, I'll reduce the lemon juice next time.
