Preheat your oven to 375°F (190°C). Generously coat 16 muffin cups in two muffin pans with cooking spray to prevent sticking.

In a large skillet set over medium heat, combine the ground beef, chopped bacon, minced onion, salt, and pepper. Cook, stirring frequently, until the beef is browned and cooked through, approximately 6 minutes. Drain any excess fat from the skillet, then stir in the dill pickle relish, yellow mustard, BBQ sauce, and garlic powder. Remove from heat and allow the filling to cool slightly.

Separate each biscuit from the package and then halve each biscuit to create 16 portions. Gently stretch and pull each portion into a circle, roughly ¼ inch thick. This will form the wrapper for your cheeseburger filling.

Spoon approximately 2 tablespoons of the ground beef mixture into the center of each dough circle. Place a Cheddar cheese cube into the center of each portion.

Carefully wrap the dough around the filling, forming a ball. Pinch the edges together on the bottom to ensure the biscuits are sealed tightly around the filling. This will prevent the filling from escaping during baking.

Place each biscuit, seam-side down, into the prepared muffin cups. Lightly spray the tops of the biscuits with cooking spray and sprinkle evenly with sesame seeds.

Bake in the preheated oven until the biscuits are golden brown and fully cooked, about 15 to 20 minutes. Remove from the oven and let cool slightly before serving with ketchup on the side for dipping.

For an extra layer of flavor, consider adding a pinch of brown sugar to the ground beef mixture while cooking.
Feel free to experiment with different cheeses, such as pepper jack or Colby, to customize the flavor profile to your preference.
If you don’t have muffin pans, you can bake these on a baking sheet lined with parchment paper, though they may spread out more during baking.
These are best served warm, but can be reheated in the microwave or oven.
