Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.

Season the chicken breasts generously with salt and pepper. In a large skillet, melt the butter over medium-high heat. Add the chicken and sear on all sides until golden brown, about 5-7 minutes per side. Remove from skillet and transfer to the prepared baking dish.

In the same skillet, add the mushrooms, onion, garlic, and flour. Sauté over medium-high heat until the vegetables have softened and are fragrant, about 5 minutes. Gradually pour in the chicken broth, scraping up any browned bits from the bottom of the pan to deglaze it. Bring the mixture to a simmer and cook until it has thickened slightly, about 3-5 minutes. Pour the mushroom sauce evenly over the chicken breasts in the baking dish.

Bake in the preheated oven for 30 minutes, or until the chicken is nearly cooked through. Remove from oven and sprinkle generously with Parmesan cheese, mozzarella cheese, and diced scallions. Return to the oven and continue baking until the cheese is melted, bubbly, and lightly golden brown, and the chicken is cooked through, about 10 minutes more. An instant-read thermometer inserted into the thickest part of the chicken should register at least 165 degrees F (74 degrees C).

For a richer flavor, try using a combination of different mushroom varieties, such as cremini, shiitake, or oyster mushrooms.
If you don't have fresh scallions, dried chives can be used as a substitute.
To prevent the chicken from drying out, you can cover the baking dish with foil for the first 20 minutes of baking, then remove the foil for the remaining time.
Serve with a side of roasted vegetables, rice, or crusty bread for a complete meal.
