Cover the baking dish tightly with aluminum foil. Bake in the preheated oven until the mixture is bubbling and the vegetables are tender, about 30 minutes. (30 minutes)

Remove the foil. Stir in the pineapple chunks and cornstarch, ensuring everything is well combined. Return the dish to the oven and bake uncovered until the sauce has slightly thickened, about 10 more minutes. (12 minutes)

For a richer flavor, consider using coconut oil instead of canola oil.
If you prefer a smoother sauce, you can blend a portion of the cooked vegetables and sauce before returning the dish to the oven for the final bake.
Adjust the amount of honey to your preference. If your pineapple is very sweet, you may want to reduce the honey slightly.
This dish pairs wonderfully with roasted chicken or lamb.
