For a deeper smoke flavor, use hickory or mesquite wood chips in your smoker. Don't skip the boiling step! It helps tenderize the ribs before smoking. If you don't have a smoker, you can use your oven. Bake the ribs at 225 degrees F (110 degrees C) for about 4-5 hours, then baste with sauce and broil for a few minutes to caramelize.
