Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. (5 minutes)

In a large bowl, mash the banana until smooth. Stir in the applesauce and honey until well combined. Add the almond butter, softened butter, and egg. Mix until the wet ingredients are thoroughly incorporated. (5 minutes)

In the same bowl, add the coconut flour, gluten-free oats, dark chocolate chunks, tapioca flour, baking soda, cinnamon, and salt. Stir until the dry ingredients are just moistened and a dough forms. Be careful not to overmix. (3 minutes)

Drop rounded tablespoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie. (5 minutes)

Bake for 12-15 minutes, or until the edges are lightly golden brown and the cookies are set. (15 minutes)

For a richer chocolate flavor, use dark chocolate with a higher cocoa percentage.
