Fold the circle in half to form a half-moon shape, enclosing the peach. Gently crimp the edges with a fork to seal. Arrange the mini pies on a baking sheet lined with parchment paper. (15 minutes)

Feel free to experiment with different spices. A pinch of nutmeg or cardamom would complement the peach flavor nicely.
If you don't have a cookie cutter, you can use a knife to cut out squares or rectangles instead of circles. The shape doesn't matter as much as the taste!
