Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step

In a large, oven-safe skillet, combine zucchini, bell pepper, garlic, and salt. Add 1 cup water and simmer until zucchini is slightly tender. (5-7 minutes)

03

Step

Drain vegetables in a colander; discard garlic. (2 minutes)

04

Step

Heat olive oil in the same skillet over medium heat. Add onion, mushrooms, and butter. Cook and stir until onion is translucent. Add the drained vegetables. (5 minutes)

05

Step

In a separate bowl, whisk the eggs with salt and pepper. Pour the egg mixture over the vegetables in the skillet. Reduce the heat to low and cook until the eggs are mostly set but still slightly moist on top. (5 minutes)

06

Step

Remove from the heat and sprinkle mozzarella cheese evenly over the frittata.

07

Step

Bake in the preheated oven until the cheese is melted and the frittata is set. (10 minutes)

08

Step

Remove from the oven and turn on the broiler. Sprinkle Parmesan cheese over the frittata. Place under the preheated broiler until the cheese is bubbling and golden brown. (3-5 minutes)

09

Step

Remove from the oven and let stand for 5 minutes before cutting into wedges and serving. (5 minutes)

For a richer flavor, use a mix of mozzarella and provolone cheese.
Add a pinch of red pepper flakes for a touch of heat.
Fresh herbs like basil, parsley, or thyme can be added for extra flavor. Stir them in with the eggs.
This frittata is also delicious cold or at room temperature, making it perfect for picnics or lunchboxes.
