Follow The Directions

01

Step
10 mins

In a saucepan over low heat, combine water, butter, sugar, buttermilk powder, and salt. Bring to a simmer, stirring until butter is melted. Remove from heat and let cool to 105-110°F (41-43°C). (Approximately 10 minutes)

02

Step
10 mins

Sprinkle yeast over the cooled mixture and let stand until foamy, about 10 minutes.

03

Step
2 mins

Stir in potato flakes until well combined.

04

Step
5 mins

In the bowl of a stand mixer fitted with the dough hook, gradually add 8 cups of bread flour to the yeast mixture, mixing on low speed until a shaggy dough forms. (Approximately 5 minutes)

05

Step
8 mins

Turn the dough out onto a lightly floured surface and knead for 8 minutes, incorporating the remaining 2 cups of flour as needed, until the dough is smooth and elastic.

06

Step
1 hrs

Form the dough into a ball and place in a greased bowl, turning to coat. Cover with a clean cloth and let rise in a warm place until doubled in size, about 1 hour.

07

Step
2 mins

Grease two 9x5 inch loaf pans.

08

Step
30 mins

Punch down the dough and divide in half. Shape each half into a loaf and place in the prepared pans, seam side down. Cover with a cloth and let rise in a warm place until doubled, about 30 minutes.

09

Step
5 mins

Preheat oven to 350°F (175°C).

10

Step
30 mins

Bake for 30 minutes, or until the tops are golden brown and the loaves sound hollow when tapped. (Approximately 30 minutes)

11

Step
10 mins

Remove from pans and let cool completely on a wire rack before slicing and serving.

For a richer flavor, use milk instead of water.
Make sure your water isn't too hot when adding the yeast, or it will kill it.
If you don't have buttermilk powder, you can substitute with 1 cup of buttermilk, reducing the water by 1 cup.
For rolls, divide the dough into smaller portions and adjust baking time accordingly.
