In a small saucepan, combine the raspberries and sugar. Heat over low heat, stirring constantly, until the sugar is completely dissolved and the raspberries have softened, about 5 minutes. Strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract all the juice. Discard the seeds. (5 minutes)

Stir in the milk, lemon juice, and cinnamon into the strained raspberry mixture until well combined. Cover the bowl and refrigerate for at least 1 hour, or until thoroughly chilled. (1 hour)

Pour the chilled mixture into your ice cream maker and freeze according to the manufacturer's instructions. The sherbet should be thick and creamy. (Variable, follow ice cream maker instructions)

For a richer flavor, substitute half-and-half for the milk.
If you don't have an ice cream maker, you can still make this sherbet! Pour the chilled mixture into a freezer-safe container and freeze for about 2-3 hours, stirring every 30 minutes to break up ice crystals. This will create a smoother texture.
A pinch of freshly grated nutmeg can be added along with the cinnamon for a warmer spice profile.
If wild raspberries are unavailable, substitute with cultivated raspberries. You may need to adjust the sugar depending on the sweetness of the berries.
