Follow The Directions

01

Step
1 hrs

In a large stockpot, combine the turkey leg, thigh, and chopped turkey breast with chicken broth and diced onion. Bring to a vigorous boil over high heat, then reduce the heat to medium-low. Cover the pot and simmer, flipping the turkey pieces halfway through, until the meat is falling off the bone (approximately 1 hour).

02

Step
5 mins

Carefully transfer the cooked turkey pieces to a bowl and allow them to cool until they are safe to handle.

03

Step
10 mins

While the turkey is cooling, bring the broth in the stockpot back to a boil. Stir in the uncooked white rice, kosher salt, black pepper, and cayenne pepper. Reduce the heat to medium and let the rice simmer until it begins to plump up and absorb the broth (approximately 10 minutes).

04

Step
15 mins

Once the turkey is cool enough to handle, pick the meat off the bones and chop it into small, bite-sized pieces. Stir the chopped turkey into the simmering rice, adding more broth as needed to maintain a good consistency. Continue to cook over medium-low heat until the rice reaches your desired tenderness (10 to 15 minutes).

05

Step
5 mins

In a small bowl, combine the minced green onions, minced red pepper, and minced cilantro leaves to create the fresh salsa. Taste the turkey rice and adjust seasonings as desired. Scoop the rice into serving bowls and generously top with the fresh salsa before serving.

For a richer flavor, use homemade chicken broth or turkey stock.
Feel free to experiment with different types of rice, such as brown rice or wild rice. Adjust cooking time accordingly.
Add other vegetables to the rice, such as carrots, celery, or peas, for extra nutrients and flavor.
If you don't have fresh cilantro, you can substitute with parsley or other fresh herbs.
Make a big batch and freeze leftovers for a quick and easy meal.
