In a medium pan, heat 1 teaspoon of olive oil over medium-high heat. Brown the ground sausage, breaking it up with a spoon, until fully cooked (5-7 minutes).

Crack the eggs individually into a ramekin or small cup. Create a gentle whirlpool in the simmering water by stirring in a circular motion. Carefully pour each egg into the center of the whirlpool and poach for 3 minutes. Remove with a slotted spoon and drain on paper towels.

While the eggs are poaching, use a spiralizer to cut the sweet potato into noodles.

Heat the remaining 1 teaspoon of olive oil in a large skillet over medium heat. Add the sweet potato noodles and cook, tossing occasionally, until they begin to soften but still have a slight bite (5-7 minutes). Season with salt and pepper to taste.

Transfer the cooked sweet potato noodles to a large bowl. Drain any excess grease from the cooked sausage and add it to the noodles. Toss gently with the salsa.

Divide the sweet potato noodle mixture between two bowls. Top each bowl with diced avocado and a poached egg. Serve immediately.

For a vegetarian option, substitute the ground sausage with crumbled tofu or black beans.
Add a sprinkle of red pepper flakes for a touch of heat.
If you don't have a spiralizer, you can use a vegetable peeler to create wide ribbons of sweet potato.
Ensure the water is at a gentle simmer, not a rolling boil, to prevent the eggs from breaking apart.
Poaching time may vary slightly depending on the size of the eggs and the temperature of the water. Adjust accordingly.
