In a mixing bowl, whisk together the soy sauce, 2/3 of the minced scallions, minced garlic, sesame seeds, cornstarch, minced ginger, mirin, sugar, red pepper flakes, and sesame oil. (5 minutes)

Place the shrimp in a resealable plastic bag. Pour the soy sauce marinade over the shrimp. Seal the bag, removing any excess air, and shake to ensure the shrimp are thoroughly coated. Marinate in the refrigerator for 15 to 20 minutes. (2 minutes)

Heat a skillet over medium-high heat. Add the shrimp to the hot skillet, reserving the remaining marinade in the bag. Cook, stirring frequently, until the shrimp turn opaque and are cooked through, about 3 to 5 minutes. Transfer the cooked shrimp to a serving bowl. (5 minutes)

Add the reserved marinade (about 3 tablespoons) and gochujang to the same skillet. Cook and stir over medium-low heat until the sauce thickens slightly, approximately 2 minutes. (3 minutes)

Pour the thickened glaze over the cooked shrimp, ensuring they are well coated. Alternatively, serve the glaze as a dipping sauce on the side. Garnish with the remaining 1/3 minced scallions. (1 minute)

For a richer flavor, use dark soy sauce instead of light soy sauce.
Adjust the amount of red pepper flakes and gochujang to suit your spice preference.
Serve immediately for the best taste and texture.
