Follow The Directions

01

Step

Prepare the Creole Sauce: In a saucepan, heat olive oil over medium heat. Add diced onion and garlic, sautéing until softened and translucent (approximately 5 minutes). Stir in the diced green bell pepper, tomato sauce, and crushed tomatoes. Season with salt, chili powder, sugar, black pepper, cloves, and the bay leaf. Bring to a simmer, then reduce heat to medium-low, cover, and simmer for 20 minutes, stirring occasionally to prevent sticking.

02

Step

Prepare the Peppers and Beef Filling: While the sauce simmers, lightly microwave the bell peppers until slightly tender (about 45 seconds). Preheat a large skillet over medium-high heat. Add the ground beef, cooking and stirring until browned and crumbly. Drain off any excess grease. Stir in the minced onion and diced celery. Cook for another 5 minutes, then fold in the cooked rice and Parmesan cheese. Season generously with salt and pepper to taste.

03

Step

Preheat the Oven: Preheat your oven to 375 degrees F (190 degrees C).

04

Step

Assemble and Bake: Stir about 1/2 cup of the prepared Creole sauce into the beef mixture to add moisture and flavor. Stuff each bell pepper generously with the beef mixture. Place the stuffed peppers into a 9x9 inch baking dish. Pour the remaining Creole sauce evenly over the peppers.

05

Step

Bake the Peppers: Bake the uncovered peppers until they are heated through and beginning to brown, approximately 25 minutes.

For a richer sauce, consider adding a tablespoon of tomato paste along with the crushed tomatoes.
Feel free to experiment with different types of ground meat, such as ground turkey or Italian sausage.
To add a touch of heat, incorporate a pinch of cayenne pepper into the Creole sauce or beef filling.
Ensure the rice is cold before mixing it into the beef filling to prevent overcooking during baking.
If you don't have time to make your own Creole sauce, you can use a high-quality store-bought version.

The peppers were a little watery. Next time, I'll try broiling them for a few minutes after baking to remove excess moisture.

I added a can of diced tomatoes to the meat mixture for extra flavor and moisture.

I found the sauce a bit too sweet, so I reduced the sugar to 1/2 teaspoon.
