Follow The Directions

01

Step

In a medium saucepan, gently arrange the quartered pears. (5 minutes)

02

Step

Sprinkle the sugar over the pears. Add the orange peel and cinnamon stick. (2 minutes)

03

Step

Pour the red wine over the pears, ensuring they are fully submerged. Add more wine if needed. (3 minutes)

04

Step

Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. (5 minutes)

05

Step

Simmer gently, uncovered, until the pears are tender and have absorbed the rich red color of the wine, approximately 2 1/2 hours.

06

Step

Carefully transfer the pears to a serving dish using a slotted spoon. (5 minutes)

07

Step

The pears can be served warm, at room temperature, or chilled. The poaching liquid can be further reduced to create a syrup to drizzle over the pears, if desired.

For a richer flavor, add a star anise or a few cloves to the poaching liquid.
Use a good quality red wine for the best results.
The pears will continue to deepen in color and flavor as they cool.
These poached pears can be stored in the refrigerator for up to 3 days in the poaching liquid.
Serve with a dollop of mascarpone cheese or a scoop of vanilla ice cream for an extra decadent treat.

Make sure to use firm pears, or they will fall apart during cooking. I learned that the hard way!
