Evenly distribute half of the Mexican-style cheese blend among the tortillas. Spoon the zucchini filling in a line across the center of each tortilla, atop the cheese.

Fold in the opposing edges of the tortillas to partially cover the filling. Then, roll one of the remaining edges tightly around the filling to create a burrito. Place the burrito, seam-side down, in the prepared baking dish.

Bake in the preheated oven until the cheese is melted and the burritos are thoroughly heated (about 15 minutes). Before serving, sprinkle the remaining Mexican cheese blend over the burritos.

For an extra layer of flavor, consider adding fresh, chopped cilantro to the zucchini mixture before filling the tortillas.
Serve these burritos with your favorite toppings, such as sour cream, guacamole, avocado slices, or a vibrant salsa.
Feel free to customize the vegetables based on your preference and availability. Corn, mushrooms, or spinach would be delicious additions.
