Follow The Directions

01

Step
8 mins

Bring a large pot of lightly salted water to a rolling boil. Add the fettuccine and cook according to package directions, until al dente (approximately 8 minutes).

02

Step
5 mins

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the onion, celery, and garlic and sauté until softened (3-5 minutes). Stir in the diced chile peppers and cook for another 5 minutes, allowing their flavor to infuse the oil.

03

Step
3 mins

Add the shrimp to the skillet and cook until they turn pink and opaque (about 3 minutes). Be careful not to overcook them.

04

Step
5 mins

Stir in the chopped tomatoes and parsley. Cook for 5 minutes, allowing the tomatoes to soften and release their juices.

05

Step
5 mins

Season the sauce with lemon juice, sugar, salt, and pepper to taste. Cook for another 5 minutes, allowing the flavors to meld together.

06

Step
2 mins

Drain the fettuccine, reserving about 1/2 cup of the pasta water. Toss the fettuccine with the shrimp mixture. If the sauce seems too thick, add a little of the reserved pasta water to loosen it up.

07

Step
0 mins

Serve immediately, garnished with extra parsley if desired.

For a richer flavor, use San Marzano tomatoes.
Adjust the amount of chile peppers to your desired level of spiciness.
A splash of dry white wine added to the sauce along with the tomatoes can add depth of flavor.
Serve with a sprinkle of grated Parmesan cheese, if desired.
Fresh basil can be substituted for parsley.
