Follow The Directions

01

Step

Prepare the Gingered Dressing: Whisk together 1/4 cup reduced sodium soy sauce, 1/4 cup rice vinegar, 1-inch piece peeled fresh ginger, grated, 2 tablespoons chopped fresh cilantro, 1 tablespoon sesame oil and 2 teaspoons chile paste with garlic until well blended. Set aside. (Prep time: 10 minutes)

02

Step

Marinate and Cook the Beef: In a medium bowl, combine the chopped flank steak with canola oil, minced garlic, and grated ginger. Season generously with salt and pepper. Heat a non-stick skillet over medium-high heat and sauté the beef mixture until thoroughly cooked. (Cook time: 8-10 minutes)

03

Step

Flavor the Beef: Using a slotted spoon, transfer the cooked beef to a clean medium bowl. Mix with 2 tablespoons of the prepared Gingered Dressing. (Prep time: 2 minutes)

04

Step

Prepare the Salad Base: In a large bowl, combine the salad blend, snap peas from the package, diced bell pepper, chopped onion, and diced cucumber. (Prep time: 5 minutes)

05

Step

Dress the Salad: Toss the salad base with the Gingered Dressing to your liking, ensuring all ingredients are lightly coated. (Prep time: 2 minutes)

06

Step

Assemble and Garnish: Transfer the dressed salad to a serving platter or individual serving plates. Spoon the gingered beef evenly over the salad. Sprinkle chopped peanuts and fresh cilantro over the top. Serve immediately with fresh lime wedges for squeezing over, as desired. (Prep time: 5 minutes)

For a spicier kick, add more chile paste to the dressing, or a pinch of red pepper flakes to the beef while cooking.
If you don't have fresh cilantro, you can substitute with fresh parsley.
Feel free to add other vegetables to the salad, such as shredded carrots, or bean sprouts.
The Gingered Dressing can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days.
