In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat. Add the finely chopped onions, carrots, and celery. Sauté until softened and translucent, about 8-10 minutes.

Add the ground beef and pork to the pot. Break up the meat with a spoon and cook until browned, ensuring no pink remains, about 7-10 minutes.

Stir in the chopped tomatoes, dried oregano, tarragon, sage, rosemary, and bay leaves. Season generously with salt and freshly ground black pepper. Bring to a simmer, then reduce heat to low, cover, and simmer for at least 1 hour, or up to 2 hours, stirring occasionally to prevent sticking.

In the last 10 minutes of cooking, stir in the sliced mushrooms. Continue to simmer, uncovered, until the mushrooms are tender and the sauce has thickened to your desired consistency, about 10 minutes.

Remove the bay leaves before serving. Serve hot over your favorite pasta.

For an even deeper flavor, consider adding a splash of dry red wine after browning the meat. Let it reduce slightly before adding the tomatoes.
Feel free to adjust the herbs to your liking. Fresh herbs can also be used, simply double the quantity.
This sauce can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for longer storage. Reheat gently before serving.
