Follow The Directions

01

Step
12 mins

In a large skillet, heat over medium-high heat. Cook and stir ground turkey until browned and crumbly (5-7 minutes). Add onion and sauté until softened and translucent (about 5 minutes). Transfer mixture to a slow cooker.

02

Step
1 mins

Add water, diced tomatoes with juice, potatoes, carrots, bell pepper, celery, lentils, broccoli, frozen corn, molasses, bay leaves, bouillon cubes, basil, salt, and pepper to the slow cooker.

03

Step
1 mins

Cook on Low for 6-8 hours or on High for 5-6 hours. Add up to 2 cups more water depending on your desired soup thickness.

For a richer flavor, consider browning the ground turkey with a touch of olive oil and garlic before adding it to the slow cooker.
Feel free to customize the vegetables based on your preferences and what's in season. Zucchini, green beans, or spinach would also be delicious additions.
If you prefer a smoother soup, you can use an immersion blender to partially blend it before serving.
Adjust the amount of molasses to your liking, starting with less and adding more to achieve the desired sweetness.
Remove the bay leaves before serving.

I found that 6 hours on low was perfect for my slow cooker. The lentils were tender and the vegetables were cooked through but not mushy.

  • Keely Walter

This recipe is so versatile! I've made it with chicken instead of turkey, and it's just as good.

Be careful not to add too much water, or the soup will be too thin. I started with 4 cups and only added a little more at the end.

I doubled the recipe and froze half for later. It reheats beautifully!
