Combine all ingredients—water, ham, diced tomatoes, lentils, chopped onion, sliced carrots, chopped celery, minced garlic, black pepper, salt, thyme, and bay leaf—in a 6-quart or larger slow cooker. (5 minutes)

Cover and cook on Low for 6 to 8 hours, or on High for 3 to 4 hours, or until the lentils and vegetables are tender. (6-8 hours)

Remove the bay leaf before serving. Taste and adjust seasoning as needed, adding more salt, pepper, or thyme to your liking. (5 minutes)

For a vegetarian version, omit the ham and add 1 teaspoon of smoked paprika for a smoky flavor.
If you like a thicker soup, mash some of the lentils against the side of the slow cooker before serving.
This soup freezes well! Allow it to cool completely before transferring to freezer-safe containers.
