In a large skillet, combine peaches, 2/3 cup white sugar, brown sugar, water, 1/2 cup (1 stick) butter, and cinnamon. Bring to a boil over medium-high heat. (5 minutes)

Cover the skillet with a lid and reduce heat to medium. Cook until the sugars have dissolved and the peaches are softened, stirring occasionally. (10 minutes)

In a medium bowl, whisk together flour, 1/3 cup white sugar, baking powder, and salt.

Cut in 3 tablespoons cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

Add milk and stir until just combined, forming a soft dough.

Drop tablespoons of dough evenly over the simmering peach mixture in the skillet.

Cover the skillet tightly with a lid and cook, without lifting the lid, until the dumplings are puffed and cooked through, and a toothpick inserted into a dumpling comes out clean. (15-20 minutes)

Let cool slightly before serving. Serve warm, with a scoop of vanilla ice cream or a drizzle of cream, if desired.

For extra flavor, add a splash of vanilla extract to the peach mixture.
If you don't have fresh peaches, you can use frozen or canned peaches. Be sure to drain canned peaches well before using.
Adjust the amount of cinnamon to your preference.
For richer dumplings, use heavy cream instead of milk.
These dumplings are best served warm, but can be stored in the refrigerator for up to 2 days. Reheat before serving.
