Prepare the Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a 12x12-inch square. Using a sharp knife or pizza cutter, cut the sheet into sixteen 3x3-inch squares. Place a generous spoonful of the salmon and feta filling in the center of each square. Carefully pull together the corners of each square to form 16 delightful packets, pinching the seams to seal. Brush the tops of the packets with the beaten egg white to promote golden browning. Place the prepared packets on the parchment-lined baking sheets. (25 minutes)
