Bring a large pot of lightly salted water to a boil. Add the trimmed romano beans and cook uncovered until they are nearly tender, about 5 minutes.

In a mortar, combine the sliced garlic, olive oil, torn mint leaves, and a generous pinch of salt. Grind into a paste using a pestle. (5 minutes)

Pour the white wine vinegar and half of the garlic-mint mixture over the beans. Toss gently to coat evenly. (2 minutes)

Transfer the beans to a resealable bag or container. Pour the remaining garlic-mint mixture over the beans. Remove as much air as possible, seal, and refrigerate for a minimum of 4 hours, or preferably overnight, to allow the flavors to meld. (2 minutes)

Remove the beans from the refrigerator. Garnish with fresh mint leaves before serving. (1 minute)

For an extra layer of flavor, try adding a pinch of red pepper flakes to the garlic-mint mixture.
If you don't have a mortar and pestle, you can finely mince the garlic and mint, then whisk together with the olive oil and salt.
Marinating the beans overnight will intensify the flavors and create a delightful pickled effect. Adjust marinating time to suit your preference.
Ensure the beans are thoroughly drained after boiling to prevent a watery salad.
