Separate the fat from the chicken drippings and reserve. In the roasting pan, whisk the flour into the remaining drippings, creating a dry paste. Add 2 tablespoons of the reserved fat (or more, if needed) to form a cohesive mixture. (2 minutes)

Place the pan over low heat. Toast the flour mixture, stirring constantly, until it develops a light brown color and emits a nutty aroma. (5 minutes)

Gradually drizzle in the cold chicken stock, about 1/3 cup at a time, whisking continuously to ensure each addition is fully incorporated and smooth. Scrape up any browned bits from the bottom of the pan to intensify the flavor. Bring the gravy to a gentle simmer. (3 minutes)

Continue to cook, whisking constantly, until the gravy thickens and the flour is fully integrated, approximately 8 to 10 minutes. Season with salt and pepper to taste. For an exceptionally smooth gravy, strain before serving. (10 minutes)

For the richest flavor, use homemade chicken stock.
If the gravy becomes too thick, whisk in additional chicken stock to reach your desired consistency.
Feel free to add a splash of cream or a pat of butter at the end for extra richness and shine.
A splash of dry sherry or white wine can add depth and complexity to the gravy.
If you don't have enough drippings, supplement with butter or olive oil.
