Follow The Directions

01

Step

In a medium bowl, combine graham cracker crumbs, 1/4 cup brown sugar, and melted butter. Mix well until evenly moistened. (5 minutes)

02

Step

Press the mixture firmly into the bottom of a 9x9-inch square baking dish to create a compact crust. (5 minutes)

03

Step

In a large bowl, whisk together pumpkin puree, remaining 1/2 cup brown sugar, salt, nutmeg, cloves, and 1 teaspoon cinnamon until smooth and well combined. (5 minutes)

04

Step

Gently fold in the softened vanilla ice cream until just combined, being careful not to overmix. (3 minutes)

05

Step

Spread the pumpkin ice cream mixture evenly over the prepared graham cracker crust. (2 minutes)

06

Step

Cover the dish tightly with plastic wrap and freeze until firm, at least 4 to 6 hours, or preferably overnight. (240-360 minutes)

07

Step

In a chilled bowl, whip the heavy cream with an electric mixer until soft peaks form. Gradually add the confectioners' sugar and remaining 1/4 teaspoon cinnamon, and continue to whip until stiff peaks form. (5 minutes)

08

Step

To serve, cut the frozen parfait into squares. Dollop each square with the spiced whipped cream and serve immediately. (5 minutes)

For a richer flavor, use brown butter instead of melted butter in the crust.
If you prefer a stronger spice flavor, add an extra pinch of nutmeg or cloves to the pumpkin mixture.
Garnish with chopped pecans or a sprinkle of cinnamon for an elegant presentation.
The parfait can be made several days in advance and stored in the freezer until ready to serve.

Freezing it overnight made it perfectly firm and easy to cut. Will definitely make this again.
