For an even deeper flavor, sear the pork roast in a hot pan with a little oil before placing it in the slow cooker. This will create a beautiful crust and add richness to the dish. If you prefer a thicker gravy, remove some of the cooking liquid after the roast is cooked and whisk in a tablespoon or two of cornstarch. Return to the slow cooker and cook until thickened. Feel free to add other vegetables to the mix, such as parsnips, turnips, or sweet potatoes. Adjust the cooking time as needed. To easily shred the pork, use two forks to pull the meat apart.
