For a spicier kick, leave some of the seeds in the poblano peppers. If you don't have time to roast the poblanos, you can use canned fire-roasted green chiles as a substitute, but the flavor will be slightly different. You can add other fillings to the enchiladas, such as black beans, corn, or sautéed vegetables.
