Prepare the tofu by placing it on a plate, covering it with another plate, and applying a 3- to 5-pound weight on top. Press for 20 to 30 minutes to remove excess water. Discard the drained liquid. (35 minutes)

In a mixing bowl, whisk together the sherry vinegar, low-sodium soy sauce, olive oil, garlic powder, kosher salt, cayenne pepper, marjoram (or thyme), and black pepper to create the marinade. (5 minutes)

Cut each block of pressed tofu crosswise into 6 thick slices. Place the slices in a baking dish and pour the marinade over them, ensuring each slice is well coated. Cover the dish and chill in the refrigerator for at least 30 minutes, or up to 48 hours, turning occasionally to evenly distribute the marinade. (40 minutes)

Preheat an outdoor grill or charcoal grill to high heat. Once hot, reduce the heat to medium and lightly oil the grill grate to prevent sticking. (10 minutes)

Remove the tofu slices from the marinade, shaking off any excess liquid. Reserve the remaining marinade for creating a flavorful sauce. (5 minutes)

Grill the tofu slices on the preheated grill, turning once, until they are beautifully browned and have distinct grill marks, approximately 10 to 15 minutes total. Transfer the grilled tofu to a platter and cover with foil to keep warm. (15 minutes)

In a saucepan, bring the reserved marinade to a boil and then simmer until it reduces to about 1 cup, approximately 2 minutes. Pour the reduced marinade over the grilled tofu. Serve hot, warm, or at room temperature, garnished with fresh herbs if desired. (7 minutes)

For an extra layer of flavor, consider adding a touch of smoked paprika to the marinade.
If you don't have a grill, a grill pan on the stovetop or even baking the tofu in the oven will work.
Adjust the cayenne pepper to control the level of spiciness.
