Cut off and discard the tips of the chicken wings (optional). In a large bowl, combine the chicken wing pieces. (5 minutes)

In a food processor or blender, combine the peanut butter, water, lime juice, soy sauce, honey, sesame oil, ginger, and garlic. Process until smooth. Remove ⅓ cup of the sauce and add it to the chicken wings in the bowl, stirring to coat evenly. (10 minutes)

Add the cilantro to the remaining sauce in the food processor or blender and pulse until just combined. Set aside for serving. (2 minutes)

Arrange the chicken wings in a single layer on the prepared baking sheet. (3 minutes)

Bake for 20 minutes. Turn the wings over and bake for another 15-20 minutes, or until the wings are cooked through, the skin is crispy, and the juices run clear when pierced with a fork. (40 minutes)

Remove the wings from the oven and place them on a platter. Sprinkle with toasted sesame seeds and serve immediately with the reserved peanut-cilantro sauce for dipping. (2 minutes)

For extra crispy wings, place them under the broiler for the last 2-3 minutes of cooking, watching carefully to prevent burning.
Toast sesame seeds in a dry pan over medium heat for enhanced flavor.
Adjust the amount of honey to your preferred level of sweetness.
For a spicier kick, add a pinch of red pepper flakes to the peanut sauce.
