Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Lightly grease a 9-inch tart pan with removable bottom. (5 minutes)

02

Step

In a medium bowl, whisk together flour, granulated sugar, cinnamon, salt, nutmeg, and cardamom for the crust. Add melted butter and vanilla extract; stir until a soft dough forms. (7 minutes)

03

Step

Press dough evenly into the prepared tart pan, covering the bottom and sides. Prick the bottom of the crust several times with a fork. Place the pan on a baking sheet. (5 minutes)

04

Step

Bake in the preheated oven until the crust is just beginning to turn golden brown, about 15-20 minutes. Remove from oven and let cool slightly. (20 minutes)

05

Step

In a large bowl, gently toss sliced peaches, blueberries, honey, and lemon juice until evenly coated. Pour the fruit mixture into the cooled crust, mounding slightly in the center. (8 minutes)

06

Step

In a separate bowl, combine flour, rolled oats, brown sugar, cinnamon, nutmeg, and salt for the streusel topping. Stir in melted butter and vanilla extract until the mixture resembles coarse crumbs. Sprinkle the streusel evenly over the fruit filling. (10 minutes)

07

Step

Return the tart to the oven and bake until the topping is lightly browned and the filling is bubbling, approximately 37-42 minutes. Let cool to room temperature before removing from the pan. Refrigerate until completely chilled before slicing and serving. (40 minutes)

For a richer flavor, consider browning the butter for the streusel topping before mixing it with the other ingredients.
If you don't have a tart pan with a removable bottom, you can use a pie dish instead, but be sure to let the tart cool completely before slicing.
Feel free to experiment with other fruits, such as raspberries, blackberries, or even sliced plums, for a different twist on this classic tart.
A scoop of vanilla ice cream or a dollop of whipped cream makes a wonderful accompaniment to this tart.
