Follow The Directions

01

Step
5 mins

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish. (5 minutes)

02

Step
15 mins

Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer with half of the peach slices and dot with half the butter. Repeat layering with remaining sweet potatoes and peach slices and sprinkle with lemon juice. (15 minutes)

03

Step
5 mins

In a small bowl, combine the brown sugar, ginger, and a pinch of salt. Mix well, then sprinkle the mixture evenly over the potatoes and peaches. (5 minutes)

04

Step
2 mins

Dot the casserole with the remaining butter, and pour the coffee flavored liqueur over the top. Cover the pan tightly with aluminum foil. (2 minutes)

05

Step
1 hrs 15 mins

Bake in the preheated oven until the sweet potatoes are tender, about 1 hour. Remove the foil, sprinkle evenly with chopped pecans, and continue baking for another 10 to 15 minutes, or until the pecans are toasted and fragrant. (75 minutes)

For a richer flavor, consider using browned butter instead of regular butter.
If you don't have coffee flavored liqueur, you can substitute with a tablespoon of strong brewed coffee or a teaspoon of coffee extract mixed with 1/4 cup of water.
Feel free to adjust the amount of brown sugar and ginger to suit your taste preferences.
To prevent the pecans from burning, you can add them during the last 5 minutes of baking.
This dish can be prepared ahead of time. Assemble the casserole, cover it, and refrigerate for up to 24 hours. Add a few extra minutes to the baking time if baking from cold.
