For an extra layer of flavor, try browning the butter before adding the half-and-half and chipotle peppers.
If you prefer a smoother consistency, you can use a ricer or food mill instead of a potato masher or mixer.
Garnish with chopped fresh chives or a sprinkle of smoked paprika for a pop of color and flavor.
Adjust the amount of chipotle peppers to your preferred level of spiciness. Remember that the adobo sauce also adds flavor and heat.
For a richer flavor, substitute heavy cream for the half-and-half.
