In a large bowl, gently combine the mixed greens, orange segments, sliced fennel, and Kalamata olives. (5 minutes)

Drizzle the Orange Vinaigrette over the salad, tossing gently to coat. Use only enough vinaigrette to lightly dress the salad; reserve any remaining vinaigrette for another use. (2 minutes)

Serve immediately for the best flavor and texture. This salad can also be chilled for 30 minutes to allow the flavors to meld. (30 minutes optional)

For an extra layer of flavor, try toasting the fennel seeds and grind to a powder. Adding this to your vinaigrette will have people asking what your secret is.
When segmenting the oranges, be sure to remove all of the white pith, as it can be bitter.
If you don't have a mandoline, use a very sharp knife to thinly slice the fennel bulb. The thinner the slices, the more tender it will be.
Try adding toasted nuts such as pistachios or almonds for added crunch and nutty flavor
