Step

Flatten each sausage patty between sheets of wax paper using a tortilla press or rolling pin. Freeze until semi-firm (approximately 30 minutes).

Grease a skillet with cooking spray and heat over medium-high heat. Cook sausage patties until lightly browned on each side (2-3 minutes per side). Transfer to a wire rack over a foil-lined pan to drain excess grease. Wipe the skillet clean.

In a bowl, whisk together eggs and adobo seasoning until light and frothy.

Spray an egg ring mold with cooking spray and place it in the skillet. Pour egg mixture into the mold and cook until the edges are set (2-3 minutes). Remove the mold, flip the egg, and cook until fully set (2-4 minutes more). Repeat with the remaining egg mixture to create 5 portions.

Split the sandwich rolls. Top one half of each roll with a cooked sausage patty, an egg portion, and an equal amount of Muenster cheese. Place the other half of the roll on top to form a sandwich. Wrap each sandwich tightly in wax paper and then in aluminum foil. Store in the freezer until ready to reheat and enjoy.

For a spicier kick, try adding a pinch of red pepper flakes to the egg mixture or incorporating diced jalapeños into the sausage patties.
Experiment with different cheeses, such as cheddar, Monterey Jack, or provolone, to find your favorite combination.
These sandwiches can be reheated in the microwave, oven, or toaster oven. For best results, thaw in the refrigerator overnight before reheating.
