For a spicier kick, try using chorizo or Italian sausage. Feel free to substitute your favorite type of cheese. Monterey Jack, Pepper Jack, or Colby would also work well. If you don't have fresh mushrooms, canned mushrooms can be used. Be sure to drain them well. To prevent the casserole from drying out, you can cover it with foil during the first 15 minutes of baking.
