In a large saucepan or Dutch oven, combine the pitted prunes and enough water to just barely cover them. (5 minutes)

While the prunes are soaking, peel and cut the potatoes and carrots as directed in the ingredient list. (10 minutes)

Add the potatoes, carrots, lemon juice, and sugar to the saucepan with the prunes. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and gently simmer. (5 minutes)

Simmer the tzimus uncovered, stirring every 20 minutes to prevent sticking, until the carrots are very tender and the mixture has thickened. This should take approximately 1 hour. (60 minutes)

For a thicker tzimus, stir in the matzo meal and continue to simmer for an additional 30 minutes, stirring occasionally, until the desired consistency is reached. (30 minutes)
For a richer flavor, consider using dark brown sugar instead of white sugar. Adjust the amount to your preference.
If the tzimus becomes too thick, add a little water, a tablespoon at a time, until it reaches the desired consistency.
Tzimus can be made ahead of time and reheated. The flavors will meld and deepen as it sits.
Serve warm as a side dish or dessert.
