Bring to a simmer, then reduce heat to low, cover, and simmer gently for 3 to 4 hours, or until the beef is exceptionally tender. Check the water level periodically, adding more as needed to keep the beef submerged. (Simmer time: 3-4 hours)

Approximately one hour before serving, add the cubed potatoes and the can of chili to the pot. Stir gently to combine. (Prep time: 5 minutes). Continue to simmer until the potatoes are tender and cooked through. (Cook time: 1 hour)

For optimal flavor, prepare the goulash a day in advance and refrigerate. The flavors will meld and deepen overnight. Reheat gently before serving.
Feel free to adjust the amount of chili to your preference for heat. A pinch of cayenne pepper can also be added for an extra kick.
