Feel free to experiment with other fresh herbs like parsley or oregano.
If you don't have apple cider vinegar, white wine vinegar or lemon juice can be substituted.
This salad is best enjoyed fresh, but it can be stored in an airtight container in the refrigerator for up to 2 days.
